Green Salad with Mandarin Oranges

 

This salad has a very tasty dressing with sesame oil.  The oranges give it have a very light and summery taste.  I like it anytime.

 

Ingredients: 

 

About 6 cups of green lettuce

green onion

parsley

toasted almonds

1 can mandarin oranges (drained)

 

Dressing:

 

6 Tbsps. sesame oil

3 Tbsps. sugar

6 Tbsps. wine vinegar  ( I sometimes use rice vinegar)

1/2 tsp. salt

1/2 tsp. black pepper

Dash of tabasco

 

Preparation:

 

Combine the lettuce.  Crisper lettuces are better I think.  You could combine romaine, iceberg, red leaf, and maybe a butter lettuce or other less crisp lettuce.

 

Add the green onion, parsley, toasted almonds, and mandarin oranges.   You can use fresh peeled mandarins if you have them, but canned are also great.

 

The recipe as it was given to me also had celery, though I rarely use it.

 

Mix the ingredients.

 

Dress the salad just before serving.  Use sparingly to get just the right amount of dressing.  Not too much.  Toss thoroughly until the dressing coats everything well.
