Henry’s Smothered Chicken

Preparation: Cut the fryer into pieces,
season, and brown in a large saucepan. Brown the backs, wings, and small
pieces first, then pull them and brown the thighs, drumsticks, and
breasts. When those are ready, cover with half the chopped onions and peppers,
then the boney pieces, then the rest of the veggies. Cover and simmer for 40 min. Take the chicken out, thicken the gravy with a tbl flour, salt and pepper to taste. |
