Henry’s Smothered Chicken

This makes the BEST gravy!!!  I made this for you when you came to visit me in Austin my Jr year of college, Jerry.  You told me I was going to make someone a good wife someday!!

1 fryer (cut up)

1 onion, chopped

1 bell pepper, chopped


1 tbsp. flour

Salt and pepper to taste




Cut the fryer into pieces, season, and brown in a large saucepan. Brown the backs, wings, and small pieces first, then pull them and brown the thighs, drumsticks, and breasts. 


When those are ready, cover with half the chopped onions and peppers, then the boney pieces, then the rest of the veggies. 


Cover and simmer for 40 min. 


Take the chicken out, thicken the gravy with a tbl flour, salt and pepper to taste.
