Momís Pancakes

From Momís recipe card.



2 eggs

3 tbsp oil

1 tbsp sugar

2 Ĺ cups milk

2 cups self-rising flour

(or 2 cups flour, 1 Ĺ tsp baking soda, 1 tsp salt)



Heat a lightly oiled griddle or skillet while you prepare the batter, until a water drop bounces on the surface.

Beat eggs with oil in a bowl or pitcher.

Add sugar and beat in.

Add milk and beat until combined.

Sift flour ingredients into a separate container.

Add flour to liquid gradually, stirring with a wire whisk until the desired consistency.Donít beat, and the batter does not have to be completely smooth Ė use only the minimum stirring to combine.You may not need all the flour.

Pour onto the griddle and turn when small bubbles cover the top surface.Only a few seconds on the other side should be enough to brown them.Never squeeze the pancakes down onto the griddle, let them stay light and fluffy.
