Heat a lightly oiled griddle or skillet while
you prepare the batter, until a water drop bounces on the surface.
Beat eggs with oil in a bowl or pitcher.
Add sugar and beat in.
Add milk and beat until combined.
Sift flour ingredients into a separate
Add flour to liquid gradually, stirring
with a wire whisk until the desired consistency.† Donít beat, and the batter does not have to
be completely smooth Ė use only the minimum stirring to combine.† You may not need all the flour.
Pour onto the griddle and turn when
small bubbles cover the top surface.† Only
a few seconds on the other side should be enough to brown them.† Never squeeze the pancakes down onto the
griddle, let them stay light and fluffy.
