Mom’s Beef Stroganoff

From Mom’s recipe card.



2 lbs steak in 1” pieces (alt: thin 1”wide strips)

Small amount of flour

1 cup onions, sliced

2 cloves garlic

1 lb mushrooms, sliced

Salt and pepper to taste

1 pint sour cream

2 tbsp tomato paste

2 tbsp Worcestershire Sauce

Few drops Tabasco Sauce



Dredge meat in flour (and salt and pepper) and brown.

Add onions and garlic and sauté until the onions are clear.

Add mushrooms and brown lightly.

Correct seasoning to taste.

Add the rest of the ingredients and simmer 15 to 20 minutes.

Serve over rice or noodles.

Sprinkle with Parmesan cheese.

Jerry’s Alternative:  Use thin strips of steak cut across the grain.  Dredge and brown lightly then remove from the pan.  Proceed as in recipe, but add the steak back in only for the last 3 minutes of simmering.  Garnish with chopped parsley instead of parmesan.
