Bohemian Beef

This is kind of like a poor-man's beef
stroganoff. Dave Drake and I used to make this when we were in
college, and Kate updated it a little when the packaged "beef flavored rice"
disappeared from store shelves. |

Ingredients:
1 lb.
ground beef
1 cup raw rice
1/4 cup butter
2 cups sliced mushrooms
2 cups beef
stock
(originally 2 cups water
plus 1 packet beef seasoning
Kate uses Lipton Onion Soup Mix)
1/2 cup white wine
2 tbsps shredded parsley
1 cup sour cream

Preparation

Preheat oven to 350F.
Brown ground beef
well in small skillet
Turn into a 2 qt.
casserole along with rice
Add butter to
skillet and saute mushrooms.
Combine wine and
beef stock
(or wine and water with beef seasoning for rice or Lipton's onion soup mix)
Pour into skillet
and stir to dissolve the good stuff on the bottom of the skillet.
Pour over beef
mixture, mixing well.
Cover and bake in
a 350 degree oven for 40-45 minutes.
Just before
serving, thoroughly stir in parsley and sour cream.
Serves 6.
